Easy Mango Salad Recipe
Mangos are delicious and like the elixir of the gods. A wonderful selection of mangos has been available this season so much so that it has inspired this easy mango recipe. Many of the mangos we have eaten this season are from Florida, but we have also been able to get some from Peru and Mexico. The best mangos have had a consistency like custard, and are easily cut with a knife as it slides smoothly through the fruit with little effort. The delicious fruit has a bouquet of aromas that include mango, peach and pineapple all in one fruit.
Because the mangoes were so delicious one mango was not enough to satisfy our desire for these exquisite fruits. Thus the easy mango salad recipe was born so we could have multiple helpings of the sweet fruit.
Simply cut up several mangoes in medium size cubes, place in a medium size bowl, and toss with dry, shredded coconut and chopped roasted almonds. If you desire a dressing, simply mix the juice of one lime with a little honey, pour over mango salad and toss.
This delicious and tasty fruit salad goes great as a side dish to avocado salad recipe or serve chilled for a lovely, satisfying and healthy dessert.
